The Manchester Neapolitan pizzeria serving hot pot pizzas

Forbici arrives in Manchester next month and has released its menu, with twists on Northern classics

Forbici, Manchester’s soon-to-open pioneering pizzeria, is lifting the lid on its menu, revealing a bold new approach to Neapolitan-inspired pizza. Precision is at its core, with its signature ‘Forbici formula’ crafting high-rise pizzas that pay homage to Neapolitan tradition whilst blending with Manchester’s unique culture.

Bringing a taste of Manchester to Forbici, limited-time guest pizzas will offer a Neapolitan take on beloved British flavours. Joining the menu for the first six weeks will be a Lancashire hotpot inspired pizza, paying homage to the rich, comforting Northern staple and a black pudding pizza, celebrating one of the region’s most iconic ingredients, with more exciting flavours to come.

These inventive twists blend the best of both worlds: crispy, airy Neapolitan dough meets hearty, familiar flavours offering a fresh yet nostalgic experience. With more exciting collaborations and locally inspired creations on the horizon, Forbici’s guest pizzas promise to keep things interesting for adventurous food lovers.

Rooted in centuries of craftsmanship, Forbici’s ‘new wave’ approach promises pizza the authentic way: cut into four delicious quarters with scissors, perfect for folding and savouring.

Whatever the topping, at the heart of every Forbici pizza is its not-so-secret recipe: world-class biga dough, proofed for 12 hours at a toasty 24°c to achieve the perfect pH of 5.0. This is the foundation of Forbici’s signature high-walled crust; light, airy, and available only while it lasts. Made fresh daily with the finest flour from Molini Pizzuti, the dough is a masterclass in precision, bringing the science of fermentation to the art of pizza-making.

Each pizza is built on this world-class base, topped with the finest Italian ingredients. In addition to the exciting guest pizzas which will change every six weeks to offer diners something new, the menu will also feature beloved classics like the Margherita with San Marzano tomato, fior di latte, and fresh basil; the Americana with pepperoni; and the Calabrese, layered with stracciatella, spicy ‘nduja, and basil.

All pizzas are finished with extra virgin olive oil, with the option to swap for vegan mozzarella-style cheese on request.

Little ones can enjoy a taste of Italy with Forbici’s dedicated kids' menu, offering half portions of any pizza at half the price for children aged 11 and under.

To complement its signature pizzas, Forbici has partnered with Amarcord, one of Italy’s pioneering independent breweries, to bring a new wave of craft beer to Manchester. Designed to enhance every bite, Amarcord’s crisp, refreshing brews are the perfect pairing. Keeping things local, Shindigger’s Manchester lager adds a Northern touch to the drinks menu. For those opting for a soft drink, classic Italian sodas like Polara Limonata and Lurisia Chinotto are also available.
